Rum, distilled from sugar cane is a drink shared by many cultures, this class will be concentrating on the aged rums of Panama. Spirits importer, Peter will share his knowledge of production and introduce us to his favourites. This class will be a vertical tasting of four aged rums from Varela Hermanos, Panama’s leading distiller of sugar cane spirits. Participants will learn the effect on taste, colour and aroma of barrel aging, and Peter will also cover different blending styles. This class will enable you to go beyond a rum and coke.

Peter Eriksen is an importer of various spirits to Australia, including absinthe. But he has always had a fascination with rum, it has been an adult passion. He specialises in importing exclusively from family run and owned distilleries’ and imports spirits and liqueurs from around the world. His business, Upsynth Pty Limited, commenced importing in 2006 and supplies mainly to cocktail bars, clubs and restaurants. Online sales commenced in 2014.
